What is the recommended wash temperature for disinfection?
To keep infection at bay, water temperatures have to be maintained for certain time periods during the dishwashing process. If a temperature of at least 65 degrees is kept for at least ten minutes (or 71 degrees for a minimum of three minutes), the disinfection process will be efficient. Anything less than this could represent a clear danger to residents, guests, employees and other end users.
Every dishwasher needs to be fitted with accurate heat sensors, so as to ascertain correct temperatures throughout the wash cycle. And these heat sensors need to be checked, monitored and calibrated on a regular basis. In order to prove adherence to the regulations, business owners need to keep records of temperature levels, and of any changes in calibration that have been made.
